“He will be deeply missed by all, with his loss most profoundly felt by his adored family, who are grateful for all the love and support that has been given.”

Granger passed away following a battle with cancer, as confirmed by his obituary in The Guardian.

While Granger was renowned for his eateries, he was also dubbed the ‘godfather’ of avocado toast – reportedly, the brunch dish first made its way onto a menu at one of Granger’s cafes in 1993.

The popular menu item – which can be served as a breakfast, brunch, or light snack – is an open sandwich which consists of toast and mashed avocado.

It can often come with a variation of flavours.

However, in Granger’s original recipe – published in his book ‘Sydney Food’ – the ripe avocado was not smashed but quartered and was dressed with olive oil, lime juice and coriander.

Along with avocado toast, he was also recognised for his perfected scrambled eggs – The New York Times called him ‘the egg master of Sydney’ and described his scrambled eggs ‘as light as the breath of an angel’.

Due to his impact on the food industry, Granger was recognised with the Medal of the Order of Australia for his contribution to tourism and hospitality in January 2023.

Speaking to the BBC in 2019, the chef reflected on this career: “I’ve done all these extraordinary things, just from liking to cook pancakes and scrambled eggs, which is pretty amazing.”

Following his death, many celebrities paid tribute to the acclaimed chef.

Fellow chef Jamie Oliver penned: “This is devastating news, I’m so sad to hear this, what a guy he was… a wonderful human, kind calm soul…

“I admired everything he represented in food, I remember the first time I met him many moons ago he couldn’t have been nicer and his food so good…

“Sending so much love to all his family, rest in peace, Bill, he will be sorely missed.”

“I’m heartbroken to hear this. So cruel,” added TV cook Nigella Lawson.

Bill Granger is survived by his wife Natalie Elliott and three daughters, Edie, Inès and Bunny.
